so i got a can of artichoke hearts the other day at trader joe's. i've used them as a topping on pizza and now have leftover hearts. anyone got any good tasty recipes or ideas? keep in mind they're not marinated. thanks!!

I read a recipe somewhere for an artichoke heart dip. It sounded yummy, but I just can't remember whre it was. Maybe Google will come up with something... :)

My favorite easy last-minute party appetizer:

1 can artichoke hearts (NOT marinated)
1 cup mayonnaise
1 cup shredded parmesan cheese

optional:
garlic powder
crab meat

The amounts are what were originally told to me, but I never measure - I just add mayo and cheese until it looks "right" to me. Put it all in an oven-safe dish (heck, just dump it in there in the first place to mix it all up) and bake at 350F for about 30 minutes. Delicious on crackers!

I use this same recipe but take a round loaf of bread, cut off the top, scoop most of the doughy part of the bread out and fill with the dip. Bake or broil until bubbly. Tear off pieces of the bread and use for dunking. Outta this world!

Throw them over pasta... I did the same thing with my leftovers the other night-
I sauted up the fridge odds and ends: scallions, garlic, artichoke hearts in olive oil with some salt, pepper, and a shot of red pepper flakes and then threw it over penne pasta. 'Twas a hit with my last minute dinner guest. (Read: Boy)

I had such a taste for artichoke dip after reading this I got some for lunch - yum!

I definitely second the pasta idea - try chicken and pasta with the artichokes and a lemon butter sauce...

Mmmm....I love my Feta Artichoke Dip. I think I remember the recipie.

4oz (or regular size pkg) Feta
1 can Artichoke Hearts
Tiny jar of pimentos
1 cup (or so) mayo
1 cup (or so) parmesan
Some garlic to taste

Mmmmmmmmm....so good!! I think I'll make that this weekend!!

ETA: Use the same cooking instructions as the recipie above. 350 degrees for about 20 or so minutes or until cheese is melted and starts to brown.

I am addicted to Trader Joe's. I should get a job there. Anyway, I often throw artichoke hearts in various pasta dishes, and they're great in a salad too, especially a Greek salad. Have you tried TJ's artichoke dip? It's awesome.
